Bikini Recipe

Serves 10 people

To make the Clementine Cordial (yields 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

Ingredients for the Drink (makes 850ml, enough for 10)

400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Method

Making the Cordial: Put the listed ingredients inside a pot, bring to a gentle boil, mixing until the sugar dissolves. Next, turn off the stove allowing it to cool fully. Transfer into an sterilised bottle, cap it and refrigerate it in the fridge, where it will keep for up to four weeks.

For the Cocktail Base: Combine all the liquids into one large bottle, allow it to infuse for one hour, then strain preferably using a fine cloth, making it perfectly clear.

When ready to serve: Add 85ml from the batch mix into a mixing glass filled with ice, gently stirring lightly for one minute to cool it down. Strain to a cold coupe glass or similar, garnish with a few cranberries and complete it using a brief mist of mandarin oil over the drink.
